Food / DrinkTonight I was in the mood for white wine and fish. I bought some fresh Halibut from the "Fish Man" who frequents my town on Thursdays and crab cakes too. I purchased Kim Crawford's 2006 Marlborough Sauvignon Blanc as an accompaniment and enjoyed dinner immensely. (See my wine review @ www.whattodrinktonight.blogspot.com)

Another good food and wine pairing. Alongside the halibut, I roasted spaghetti squash and served it drizzled with olive oil, sea salt, pepper and freshly grated parmesean cheese, and baby carrots in butter.

The halibut recipe follows.
INGREDIENTS:

1.5 lbs fresh Halibut Filet
1/2 t sea salt
1/4 t freshly ground black pepper
1/4 cup dry white wine (I used Kim Crawford as it was what I was drinking)
2 T fresh lemon juice
1 T olive oil
2 scallions, minced
2 cloves of garlic, peeled and minced
1 t crushed dried oregano

DIRECTIONS:

Preheat oven to 400 degrees F
Season halibut with salt and pepper on both sides
Place in baking dish
Whisk together all other ingredients and pour over the fish
Cover and bake for (20) minutes
